VineyardLocated at 200 meters a.s.l. with southern, south-eastern exposure, west. Planting density of 4000 plants per hectare. Spare pruning with spurred cordon and Guyot cultivation systems. Hand- picked. 90 quintals/hectare of grape.
Vinification and food pairings10 °C maceration for 5 days, fermentation with manual punching, delestage. Racking and malolaptic fermentation. Racking and 2 months batonnage.
AgingMost of all aged 14 months in 25 hectoliters barrels. Steel tank for the rest of the wine.
