Production area

Calcinara district, located in Candia village, distict of Ancona (Marche region - Italy). Same soil as "Folle".

Vineyard

10°C cold maceration for 5 days, fermentation in horizontal tanks with an ultra-soft mixing of the skins, seeds are extracted in the first part of fermentation, malolactic fermentation on the skins for a total of 40 days of contact. Racking and batonnage for the following two months.

Aging

24 months in large 25 hectoliter oak barrels followed by a year in the bottle.

Organoleptic analysis and food pairings

Intense ruby red with violet reflections. Strong bouquet, overflowing with fruity scents of cherries, cassis and light balsamic notes. Intense and persistent in the mouth with frank tannins. Excellent with braised and stewed meats or accompanied by sauces that can also be sweet. Deer. Pastas with meat sauce and medium to mature cheeses.
